Wassil for Christmas

Have you ever made wassail? I love the stuff and its a nice break from hot chocolate. I made this on Christmas Day... (I Love My Little Red CrockPot)
I halved it because I know that many people in my family don't like it... I will give you the whole recipe just in case you want to make lots.

Wassail
1 gal. apple cider, divided
1 tsp. ground cloves
1 tsp. ground allspice
1 tsp. ground nutmeg
1 tsp. cinnamon
1 (6 oz) frozen lemonade, thawed
1 (6 oz) frozen orange, juice
1/2 c. firmly packed brown sugar

Combine 2 cups apple cider and spices in a large pot; bring to boil. Reduce heat and simmer. Add remaining cider and other ingredients; heat until very hot.

Crockpot Spinach and Artichoke Dip

I saw this on line and has to make it... I made it for Christmas Eve and everyone the had some gave it a thumbs up...

Spinach and Artichike Dip
-1 (14-ounce) can artichoke hearts, drained and chopped
-1 (9-ounce) bag baby spinach, chopped
-1 cup shredded mozzarella cheese, divided
-1 cup shredded
Parmesan cheese, divided
-1/2 cup sour cream
-1/2 block of cream cheese, room temp

Drain and chop artichoke hearts, and add to thecrockpot.
Scrunch and Crop the spinach. Add to the crockpot.
Add cream cheese and sour cream
Top with 1/2 cup each shredded Mozzarella andParmesan.

Cover and cook on low for 2 hrs, or high for 1 hr. Stir.
The spinach should begin to welt. When the spinach is totally wilted, take the lid off and add the other 1/2 cup of each cheese, and let it melt while the lid remains off.

Serve with Chips

I forgot to get a picture until it was almost gone so sorry it doesn't look very pretty but it was amazing and I will make it again and again...

Banana Bread


Banana Bread

We decided that we would make Banana Bread today for a couple widows in the ward...
I love Banana Bread its one of my favorites, I let Banana's go bad just so I can make it...
I love this recipe because its so easy and quick to put together.
What you will need:

Banana Bread
1 cup sugar
1/2 cup butter
2 bananas, smashed
2 cups flour
2 eggs
1 tsp soda
add cinnamon and vanilla

Cream butter and sugar together
Add eggs one at a time and beat well
Add in your smashed Bananas
Add flour with soda

Bake in greased loaf tin for 1 hr. Start at 350 degrees when brown reduce heat to 325 degrees until toothpick comes out clean. (The reason why you turn it down is to help it so it doesn't come out dry but is still cooked all the way)

I cut my bread up and placed on plates then took them around town... It was really fun and well worth the time.

Chicken Enchilada Casserole

My sister in-law and I are doing crock pot Wednesday together. Well a couple of weeks ago she made this enchilada casserole. I remember it was before we were married, me and my mom traveled to Spanish Fork to pick up our couch and chair she was making this dish (with hamburger and red sauce)she invited us to sit down and eat dinner with them we did just that... It was amazing and I always wanted to get the recipe... Now I have it and am so excited.... I had to make it! I put a tiny spin on it, I only had chicken and green chile enchilada sauce but it worked out great...

Crockpot
Chicken Enchilada Casserole

-Chicken (cut up)
-28 oz can of enchilada sauce (I used Green Chile Sauce)
-2 cans of black beans (drained and rinsed)
-1 can olives
-Corn tortillas
-shredded cheddar cheese

Here are the steps for you
1. Combine chicken with the enchilada sauce
2. Layer ingredients in crock pot in this order
Tortillas
Chicken & Sauce
Black Beans
Olives
Cheese
3. Repeat untill everything is used up...
Here is what it looked like when I was done layering..
4. Cook for 4 to 6 hours on LOW
5. Serve with Sour Cream and Green Peppers
Here is the finished product it may not look pretty but it was sure yummy!!!

Yes I will make it again and I can't wait to try out Hamburger and Red Sauce next time :)
I ate alone (and with Trax) tonight so my rating was a 4 out of 5. Trax ate everything but the sour cream so thats a good sign.

Country Peaches

I thought I would double up the crock-pot love this Wednesday so I made a dessert with dinner

Country Peaches
1 can (29 oz) Sliced Peached
2/3 cup Old-Fashioned Oatmeal (not instant)
1 cup Bisquick
1/2 tea Cinnamon
1/2 cup Brown Sugar, firmly packed

1. Pour peaches into greased slow cooker. (Drain juice in mixing bowl)
2. Mix oatmeal, Bisquick, and peach juice together in large mixing bowl and spoon over peaches.
3. Sprinkle cinnamon and brown sugar mixer over top.
4. Cover and cook on low heat for 3 hours.
Serve Warm with a scoop of ice cream or a nice glass of milk.

Scalloped Potatoes & Ham

My in-laws gave us yummy idaho potatoes, I thought this would be a great chance to use them. The prep time was 15 minutes and easy to put together. Also its nice because its stuff that you have around the house so you don't have to go out and buy the stuff.

Scalloped Potatoes & Ham
6 large russet potatoes (sliced)
1 ham steak
1 can (10 3/4 ounces) cream of mushroom soup
1 soup can of water
1 cup shredded Cheddar cheese
pepper and salt or grill seasoning to taste

1. Layer potatoes and ham in crock-pot
2. Combine soup, water, cheese and seasoning in bowl. Mix and pour over potatoes and ham
3. Cook on HIGH for 4 hours until potatoes are fork tender. Turn crock-pot to LOW and cont. cooking for 1 hour.
4. Serve and don't forget your veggie :)

Yes I will make it again. but I will half-it because it made way more then our little family could eat. I also think that I will add some broth or milk to make it a little more moist.
*On a note don't stir! (my husband thought it need some stirring while I was out (thank you for being helpful, I love you) but it made it a little mashy.)

Stuffed Chicken Wraps

Stuffed Chicken Wraps
What You Need
-4 chicken breast
-1 cream cheese
-Bacon
-parsly and chives

So I pound out the chicken so its near flat
Mix the cream cheese, parsley and chives together (your going to want to have the cream cheese at room temp)
Spread cream cheese on chicken
Roll the chicken up and wrap the bacon around it so its nice and tight
Place on baking pan and broil for a nice crisp texture for 4 minutes each side
Place in the crock pot and cook for five hours....

Today I subbed Kindergarten, I was burnt out when I got home and didn't have enough time to make the meal I was planning it took 8 hours. My sister was sweet to watch my boys for me so I had he pick a dessert that I could make in the crock pot and she picked "Apple Brown Betty" one of her most favorite desserts ever...


'Apple Brown Betty'
cups of your favorite Apples
1 cup plain bread crumbs
1 stick of butter
1 teaspoon cinnamon
1/2 teaspoon nutmeg
3/4 cup brown sugar
1/2 cup walnuts
Everything you need...
Spray you crockpot so it wont stick.... Cut your apples into 8's and peel skin. Then put them into the crockpot.
Mix all dry ingredients then add butter and mix...
Cover the apples with the mixture. Cook for 2 hours on high....
Whip cream added a nice little touch... :) It was super yummy and made a ton.... (Sorry Picture was dark)

Mediterranean Chicken


My sister-in-law Harmoine and I have decided to do crock pot Wednesday every Wednesday! More or less try new things every Wednesday. Crock pot Wednesday is a fav in our house Duncan always looks forward to it but i haven't posted it for a long time.
I am going to post while its cooking. Cross Fingers that its yummy!!!!

Today we are doing ...
"Mediterranean Chicken"
10 Minutes Prep Time

1 Jar Ragu or Prego Pasta Sauce
1 Medium Onion Sliced
2 Cloves Garlic, Minced
1/2 Cup Sliced Olives
1/4 Cup Chicken Broth
Pinch Ground Cinnamon
6 Chicken Breasts

Step 1: Combine sauce, onion, garlic, olives, broth, cinnamon in your crock pot. Mix up then add Chicken and coat.
Step 2: Cook on LOW for 8 to 10 hours or High for 5 to 6 hours.
Step 3: Serve over rice (don't forget your choice of veggie)

Couple Tips about Crock potting...

1. Thaw your chicken (meat) or add an extra hour or two to the time...
2. You dont need to stir because of the way the crockpot is made. If you stir you will lose significant amount if heat which extends your cooking time. Best not to remove the lid...
