Four To Score/High Five

Four To Score
By:Janet Evanovich

Stephanie Plum is a magnit for TROUBLE! This book is full of cars blowing up, fires being set. There are a couple new characters, the first is Joyce Barnhardt. All i can say about her is a cheating, lying lady who needs to mind her own business. She is Stephanie's archenemy ever since sleeping with her ex-husband and even before that. Second new charater is Sally Sweet! Hello girl... a cross dressing drag queen. Stephanie needs his help and thats when things start to go sour.
Stephanie runs into some problems trying to fine Maxine and keeps running into dead ends. After everything horrible that could happen has, from one this too being homeless and broke, she moves in with Joe Morell... I have fallen head over hills for my favorite cop.

High Five
By:Janet Evanovich
In this book, Stephanie's Uncle Fred has gone missing, and her family thinks that she is just the one to find him. Uncle Fred's disappearance takes a sinister turn when his desk reveals photos of body parts. Every time Stephanie tries to find out what happened to him, all the people she interviews turn up dead.
A few random people like Randy Briggs a little person, he was just there to bug the crap out of Stephanie. No really importances.
Things get a little complicated by her attraction to 2 men in her life, her sexy cop friend Joe Morelli, and her mysterious work associate Ranger.
Mmmm I am loving Ranger in this book. He brings a breath of fresh air...

I am going to Keep Reading this series its so much fun!!! I have fallen in love with all the main people...

Three To Get Deadly

Three To Get Deadly
By: Janet Evanovich

Stephanie Plum is back in action, 6 months of the bounty hunter life. In this book she is givin the task of find Mo Bedemier, one of the most popular men in the burg. While trying to hunt him down drug dealers body's are being found dead. Could Mo the beloved figure of the burg be killing them?

This was the 3rd book and to me it was harder to get into. The bummer part about these books is that you know what is going to happen in a way... The main charter gets a job, gets threats, gets attacked, wins in the end...
But I have fallen in the love the the charters and will keep on trucking with this novel.

Cinnamon Roll Pancakes

My sister and brother-in-law made Cinnamon Roll Pancakes and they were amazing. I watched them and learned then tried them out myself. Easy and fun and they are sure YUMMY!!!

Cinnamon Roll Pancakes
Ingredients:
CINNAMON FILLING:
4 tablespoons (1/2 stick) unsalted butter, just melted (not boiling)
1/4 cup + 2 tablespoons packed light brown sugar
1/2 tablespoon ground cinnamon

CREAM CHEESE GLAZE:
4 tablespoons (1/2 stick) unsalted butter
2-ounces cream cheese, at room temperature
3/4 cup powdered sugar
1/2 teaspoon vanilla extract

PANCAKES:
1 cup all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
1 large egg, lightly beaten
1 tablespoon canola or vegetable oil

Directions:
Prepare the cinnamon filling: In a medium bowl, stir together the butter, brown sugar and cinnamon. Scoop the filling into a quart-sized heavy zip baggie and set it aside (if you don't want to put in a bag don't worry about it we just used a spoon.)

Prepare the glaze: In a small pan, heat the butter over low heat until melted. Turn off the heat and whisk in the cream cheese until it is almost smooth. Sift the powdered sugar into the pan, stir and add in vanilla extract. Set the pan aside while you make the pancakes. (Make sure the cream cheese is room temp or it will be lumpy)

Prepare the pancake batter: In a medium bowl, whisk together the flour, baking powder and salt. Whisk in the milk, egg and oil, just until the batter is moistened (a few small lumps are fine).

Cook the pancakes: Heat a large, nonstick skillet over medium-heat and spray with nonstick spray. Use the bottom of the scoop or cup to spread the batter into a circle (about 4-inches in diameter). Reduce the heat to medium low. Snip the corner of your baggie of cinnamon filling and squeeze the filling into the open corner. When your pancake begins to form bubbles, add the filling. Starting at the center of the pancake, squeeze the filling on top of the pancake batter in a swirl (just as you see in a regular cinnamon roll). Cook the pancake 2 to 3 minutes, or until the bubbles begin popping on top of the pancake and it's golden brown on the bottom. Gently but quickly flip it over. Cook an additional 2 to 3 minutes, until the other side is golden as well. When you flip the pancake onto a plate, you will see that the cinnamon filling has created a crater-swirl of cinnamon. Re-warm the glaze briefly, if needed. Serve pancakes topped with a drizzle of glaze.

I Loved it... It was really yummy and fun.

Honey Lime Enchiladas

I had a chance to take dinner to someone that had just had a baby... She can't eat any gluten so I went out of the box to make this meal gluten free. Thanks to Sara and Malarie for this recipe.
Now the first thing I thought when I heard Honey Lime Enchiladas was "Really that doesn't sound good at all" But give it a chance I thought it was amazing. Also my sister and mom thought it was amazing...

Honey Lime Enchiladas

1 1/2 pounds chicken, cooked and shredded

Sauce:
1/3 cup honey
1/4 cup lime juice
1 1/2 Tablespoons chili powder
1 teaspoon garlic powder

2 (10 ounce) cans green/red enchilada sauce (La Victoria is gluten free just check the label)
1 pound (or less, you decide) Colby Jack or Mexican blend cheese, grated
18 taco sized corn (or flour) tortillas (corn is gluten free)
Mix together sauce ingredients then add to shredded chicken.
Let the sauce soak into the meat for about 30 minutes.
Lightly spray 9x13 baking dish with PAM. Pour enough green or red enchilada sauce to cover the bottom of the dish. Lay six corn tortillas over the surface of the dish. (The will be overlapping.) Top with half of the meat mixture, then cover with cheese. Layer another six tortillas and cover with some enchilada sauce and the rest of the meat. Sprinkle cheese on top. Layer last six tortillas on top and cover with the remaining sauce and cheese. Be generous with the cheese. I tear the tortillas apart so they don't overlap as much and I like that better.
Bake at 350 degrees for 45 minutes to an hour.

Now the crock potter in me thought and you can put it in the crock pot and cook it for 4 hours on hight or 8 hours on low. Next time I make this I am going to try it out...

You get to know Grandma Mazur she is so funny, loving funerals and always getting into a little bit of trouble here and there.
Joe Morelli is back you will fall in love with him again ;)

Again there is foul language and a few "Blushing" moments.

I enjoyed and will keep reading the series.

Creamy Italian Chicken

I love to try new recipes that one reason why I am doing this wednesday cooking/crockpot... I love the fact that those that read my blog are getting into the spirit and are even sending me recipes to try. Thank you!!! I am willing to try anything so feel free to send me a recipe I will try it and post it on my blog. This week my friend sent me this so I thought I would give it a shot.. If your into trying new stuff, try this one its amazing and so easy!

CREAMY ITALIAN CHICKEN

- 4-5 Frozen Chicken Breasts (frozen)
- 2 Cans Cream of Chicken Soup
- 1 pkg. Dry Italian Dressing
- 8 oz. Cream Cheese

Place frozen chicken in crock-pot, mix other ingredients in mixing bowl, and pour over chicken. Cook on low for 6 hrs or high for 4-5 hrs. Serve with rice.
Oh my goodness this was amazing!!! I added a little bit of water to each can to get that little bit of extra cream of chicken out of the can. Also make sure your cream cheese is room temp I didn't wait because I was in a rush and it was a little lumpy (but still amazing) My friend found the dry italian dressing by the other dressings so keep an eye out because I didn't see it last time I was there.

Chicken Cordon Blue/Mash Potatoes Crockpot

I was excited to try something new and fun this week. I looked in a cook book and found chicken cordon blue that you put in the crockpot. I was so excited. I also decided that I wanted to make potatoes but just be done cook while I was in the kitchen and kids were napping, so I decided to do potatoes. I didn't want to make gravy because the point of crockpotting is to get it done and not worry about dinner the rest of the day so I picked a good seasoned recipe that didn't need gravy. The nice thing about this was its basic things you have in the house. I love to make things that I don't have to make a special run to the store. (Remember if we don't have it in this house we go with out until we can make the trip to the store. It not a quick run to the store its always a good 30 minute car time)The time to prepare was about 25 minutes for both dishes.

Chicken Cordon Blue Crockpot

6 boneless, skinless chicken breasts
6 slices Swiss Cheese (I used pepper jack because thats all I had)
6 slices of ham
1/4 cup Parmesan cheese
1/4 cup flour
1/2 teaspoon salt
1 teaspoon pepper
1/4 cup oil
1/2 cup water
1 can cream of chicken soup
1 chicken bouillon cube
What you need:
Step 1: Pound chicken until flat; place ham and cheese on each piece. Roll up chicken and secure with a toothpick.
Step 2: Combine flour and seasonings. Use this mixture to coat the chicken.

Step 3: In skillet, brown chicken in oil. Then place in crockpot
Step 4: Combine water and bouillon until dissolved then mix in with cream of chicken soup. Pour mixture over chicken
Step 5: Cook on LOW for 4-5 hours or HIGH 3-4 hours.

What I thought about it AMAZING! I really enjoyed it... The sauce was really good and we used it to flavor our potatoes a little. The potatoes really didn't need it but it gave it that extra zip...

Total Rating:

Yes we will make it again for sure. When my Husband give something a 4.5 it means it going to be used. The only thing I think I will do next time is double the cheese. I didn't taste the cheese to much and didn't get the cheese coming out like normally on chicken cordon blues.

Crockpot Mash-Potatoes with Cream Cheese

3-4 potatoes (mine were huge)
1/2 cube cream cheese
1/2 cup sour cream
1/2 tsp salt
1/2 chicken bouillon
1/4 water (use the boiling water)
1/2 tsp garlic powder
1 tablespoon parsley

Step 1: Boil potatoes as normal until fork friendly :) (you have to use a stove for the first part)
Drain and place back in pot.
Step 2: Add the cream cheese, sour cream, salt, watered bouillon and seasonings. Mash everything up.
Step 3: Place in crockpot and Cook on HIGH for 2hrs or LOW for 4hrs.

Yummy it was really good and creamy. I love creamy mash potatoes. I felt like it needed a little more salt, I will put in seasoning salt next time... I think red potatoes would be divine :)
